Baby Shower - Cake & Cupcakes

Two weeks ago I have been part of one of my best friend's surprise Baby Shower, who's due date is in  the middle of November. She is such a sweet girl and everybody got together from friends, relatives to work colleagues to make sure she has a Baby Shower party to remember.
As usual, I had to make sure that the ''sweet part'' of the party  is special and unique, just for Andreea and baby Luca.  So, I made a cute white cake decorated with blue baby shoes and hand made writing with the baby's name. Also I added theme inspired tiny decorations such as sleeping baby, stroller, feeding bottle, pacifier and many others.
Besides the cake, cookie pops, white chocolate cookies and vanilla cupcakes decorated with light blue butter-cream frosting and fondant flowers, feeding bottles and strollers.
 I also made a nice bouquet for Andreea that looked so good with the sweets.

Sweets bar - Homemade

Last week on Saturday I had to prepare my biggest sweets bar  so far  for a beautiful kids store in Zurich. You can find their website here www.4times.ch The store is just amazing! So colorful and gorgeous. I think is the best place to shop for kids and not only!

And now, I have to  show you what I put together sweets wise  for this event. The order was huge and I couldn't be any happier!

Pink Velvet Cookies with Cream Cheese Frosting

Let's start the week with some beautiful and delicious pink velvet cookies.
HAPPY TUESDAY!

 INGREDIENTS:

Cookies:

1 1/2  cup flour
1 cup  fine sugar
1 teaspoon baking powder
1/2 tsp salt
2 eggs
1/3 cup oil
1 1/2 tsp. vanilla extract
3-4 drops pink dye

Cream Cheese Filling:
4 oz. cream cheese, softened
1/4 C. butter, softened
1 tsp. vanilla extract
3-4 C. powdered sugar


DIRECTIONS:

1. Preheat oven to 375 degrees and line pans with parchment paper.
2. In a large bowl, combine flour, sugar, baking powder and salt.
3. To the dry mix add eggs, oil, pink dye and vanilla extract. Mix well.
4. Scoop out pieces of dough that are about 1 tablespoon in size, or a little bigger. (Dough will be gooey.)
5. Give them a nice round and flat shape and then place them on the pan,  a few inches apart.
6. Bake for 7-10 minutes and let cool.
 Filling: 
Beat cream cheese and butter until smooth. Add vanilla and slowly add powdered sugar until you reach your desired consistency.
 Pipe the filling  onto the bottom of half the cookies and top with another cookie.

LOVE Cookies

Last night I felt so good and that made me bake some cookies. Not ordinary cookies, but ones filled with hearts and lots of love.
Today I shared them all around my neighbors and they really loved them. It's such a great thing so spread love to the people around you <3
I found the inspiration on www.munchkinmunchies.com (design and recipe) and I must tell that it's a keeper.
A few more days to go and February ( the month of celebrating love )is here and everyone should bake these cookies and share them with the loved ones and friends.
Here is the recipe that I tried. It's really easy to make and the result is delicious!

INGREDIENTS:
  • 6 cups flour
  • 3 tsp. baking powder
  • 2 cups butter
  • 2 cups sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 tsp. salt
  • pink dye
DIRECTIONS:

Preheat oven to 350 degrees
  1.  Cream butter and sugar. 
  2.  Add eggs and vanilla.
  3.  Mix dry ingredients and add to butter mixture. Mix well.
  4.  Divide dough into two equal parts and add pink dye to one of them ( add as much pink dye as you want until you reach the color that you like). Mix well.

It's not mandatory to chill the dough before using.

Roll to desired thickness and cut into desired shapes. 

Here is a small tutorial on how to make them. as in the pictures.
  1. Cut your cookies using a round cutter.
  2. Use a small heart shaped cutter right in the middle.
  3. Add the pink small heart to a white cookie and the white one to the pink cookie.
  4. Press the heart a little bit to fill out the space.
  5. Use a small rolling pin at the end to smooth the cookies.
Bake on ungreased cookie sheet at 350 degrees for 8-10 minutes or just until beginning to turn brown around the edges.
